Grilled Stuffed Eggplants: A Simple, Delicious, and Tasty Dish
Hey there! Today, we're taking you to the heart of Gilan, where we are making one of our favorite traditional dishes: stuffed eggplants.
We start by chopping some wood for the fire. Once we get a good fire going, we wash the rice and set it to cook. Meanwhile, we grill the eggplants on the embers until charred, peel off the charred skin, and give them a quick fry in some oil.
Next, we crack and grind fresh walnuts, mixing them with pomegranate paste and spices in a hot pan. We split the eggplants open and stuff them with this delicious mixture. Then, back into the pan they go, covered and cooked on low heat over the embers until they’re perfect. After about half an hour, our stuffed eggplants are ready to enjoy with some fluffy rice.
