Binakol, also spelled binakoe, is a Filipino chicken soup made from chicken cooked in coconut water with grated coconut, green papaya, leafy vegetables, garlic, onion, ginger, lemongrass, and patis. It can also be spiced with chilis. Binakol can also be cooked with other kinds of meat or seafood.
Chicken binakol is popular among the Ilonggos and Batanguenos. Its origins, however, can be traced to the hinterlands of Panay Island in the Western Visayas. The addition of fresh coconut meat and stewing it in coconut water make binakol unique with its sweet savory broth.
