These beautiful rum balls are the perfect addition to your bake-ahead (without baking!) Christmas sweets platter this year. The recipe comes from the 1985 edition of the Catholic Women's League Association cookbook – an association co-founded by my dear Nan back in the day! This delightful recipe is easy to make. Give it a go!
RECIPE:
Ingredients:
• 250g/8.8oz Sweet biscuits / cookies (I used Milk Arrowroot biscuits)
• 115mL/3.9fl oz Dark rum
• 395g/13.9oz Sweetened condensed milk
• 18g/0.6oz Cocoa
• 65g/2.3g Coconut (desiccated, plus more for coating)
Method:
1) Crush the biscuits up into a rough crumb
2) Combine all ingredients into a large bowl
3) Refrigerate mixture for 30-60 minutes
4) Roll mixture into balls and coat with coconut
5) Keep refrigerated until ready to serve
