FAQ: How do I move my head around like that?
I use Track IR 5. Its a piece of hardware which translates my head movement into the game. There are a few similar (and cheaper) solutions around.
It is needed to play Sim? No it's not. I know many pilots who dont use headtracking at all and they doing good. I started myself with the hatstick on my joystick and did well.
But it is helpful, reduces workload and increases the immersion.
