Banana Oatmeal Cake
OH MY! This is a keeper! This cake is so delicious!
This is my banana cake recipe.
CAKE MIX
1/2 cup butter
1 tsp vanilla
2/3 cup brown sugar
2 eggs
1 cup mashed bananas
3/4 cup all purpose flour
1 1/3 cups rolled oats
1/4 tsp salt
TOPPING
1 tsp baking soda
3/4 cup rolled oats
1/3 cup brown sugar
2 tbsps. butter- melted
2 tbsps. chopped nuts (optional)
1/2 tsp cinnamon
Whip Cream
1 pint heavy cream
1/2 cup powder sugar
1/2 tsp vanilla
Mix together four, 1 1/3 cup oats, salt and baking soda. Set aside.
Cream together 1/2 cup butter, 2/3 cup brown sugar, bananas, and add eggs and vanilla. Add flour mixture. Pour into pan.
Mix together 3/4 cups oats, 1/3 cup brown sugar, melted butter, nuts (optional), and cinnamon. Sprinkle over batter.
Bake at 350 degrees for 40 to 45 mins.
Whipped cream-
Add heavy cream, vanilla, and powdered sugar to a mixer. Whip on low speed until combined. Slowly move speed up until it thickens. Blend for at least 3-6 minutes, and mixture is thick.
