Seasons happen just like regular real life seasons and they affect when plants can grow. You can plant seeds outside of seasons, but they just won't grow. The other key thing is the season clock, which shows you what season it currently is.
Finally the best trick with farming is to use greenhouse glass that allows you to grow plants at any season, as long as the plant is within 7 blocks of the greenhouse glass (this is according to the serene seasons mod).
