INGREDIENTS AND METHOD
-500g liver
-300g white onions
-white wine
-olive oil
-sage
-bay leaf
-salt
-pepper
METHOD:
-Cut the liver into strips and marinate for a few minutes in a solution of water and vinegar to reduce the iron flavor.
Heat the oil in a large nonstick pan.
Clean the onions, slice them thinly, and sauté them in the pan over low heat, adding the herbs.
Deglaze with white wine for about 15-20 minutes.
Next, add the liver slices. Cook for a few minutes on each side. Be careful, this cooking phase must be quick, no more than 5 minutes.
Season with salt and pepper and serve immediately.
