Nuke Compositing - Das Grain Node
Did you know about the das grain replace tab? You can use the replace tab to replace the grain. If you create a mask you can limit the areas that are replaced. You would normally only want to replace the grain in the area of your plate/footage that you changed.
Also I said screen left in the video but I meant screen right : )
Note: Ideally you want to sample grain that is similar to the area you have worked in. Since the sky is bright we would try to sample somewhere in the bright area where the grain would be similar.
