Hey peeps! Today I am super excited to be sharing my super easy single tortilla recipe with you. It is so simple but tastes soooo good, and all you need is 5 ingredients that you probably already have on hand. Here are the ingredients listed below:
1 Tortilla (This makes a single large tortilla, perfect for one person)
1/3 Cup Flour (All purpose)
1/8 Teaspoon Salt
1/8 Teaspoon Baking Powder
2 Tablespoons Water
2 Teaspoons Neutral Oil (Canola, vegetable, corn, etc.)
Here are a few SUPER helpful tips!:
Flour: For the flour, be sure to spoon your flour into the measuring cup, then level it off to get the most accurate measurement possible. Also, the specific amount of flour required will vary depending on where you live, the weather that day, etc.
Oil and Water: If you have one, use a liquid measuring cup for this, but if not then use a dry one instead (Either way is perfectly fine :) When measuring the oil, be sure to use a rubber spatula (or even a clean finger) to “scrape” out all the oil left inside the measuring cup. This is important because oil tends to stick to the sides of containers and we are working with a small amount of oil. We don’t want to add less than we need :)
Usually, I need to add a bit of flour when kneading the dough to prevent it from sticking, but this may not be the case for you. Also, you may even need a little less than 1/3 cup of flour if you don’t scrape out all the oil from your measuring cup / depending on where you live and the weather. Don’t worry, this is normal and your tortilla will be fine, just leave out any excess flour if you think you don’t need it. (This is unlikely to happen, but just in case it does, don’t panic!)
You can roll out the dough to about 1/8 of an inch, or even a bit thinner. It just depends on how you like your tortillas :)
If you ever have a hard time rolling out your dough, let it rest for another 5 to 10 minutes. This will let the proteins in it settle, and it will be less elastic / easier to roll.
It can be hard to tell when you are done kneading your dough. To check, shape the dough into a ball (00:56) and check with your finger if it is a bit elastic (01:02).
Letting the dough rest for 15 to 30 minutes helps make it easier to roll out. It is preferred that you don’t make this dough way in advance since it has baking powder in it, but if you really want to then you can leave it out (covered) for about 2 hours, or put it in the fridge to keep it longer than that. If you are putting it in the fridge, then make sure it is tightly covered (preferably in a container / in cling wrap) and try to eat it in 1 - 3 days. It may not be as bubbly, but it will still be super delicious!!
You can even make 1/2 of this batch for a super tiny tortilla. To do so, just about 3 tablespoons flour, 1/16th teaspoon salt, 1/16th teaspoon baking powder (you can just eyeball it if you only have a 1/8 teaspoon measure), 1 tablespoon water, and 1 teaspoon oil. (Be sure to be as accurate as possible with the water / oil since it is a very small measurement. The amount of flour may vary slightly, just add a bit more / leave some out when kneading depending on how sticky the dough is.)
All of these are just guidelines to help you along the way. Even if you mess up a little, it's ok! Making these is not hard and you will probably still end up with something yummy!
