Cheesy Courgette (Zucchini) Oven Fritters
This is my take on a recipe for courgette fritters that seems to be everywhere online*

Normally, I'd link a source but not this time because it's everywhere, and mostly rather clickbaity and content-farmy.
Ingredients:
500g courgettes (zucchini) grated
100g rolled oats
150g grated cheddar or other hard cheese
75g self-raising flour
2 eggs
1 medium onion
1 teaspoon salt
1 teaspoon marjoram (or oregano, or other herbs of your choice)
Optionally:
tomatoes, peppers, chilli flakes, smoked paprika
Other options to think about - not featured in this video but would certainly be good in this (not all of these at once):
chopped ham
chorizo or salami
olives or capers
anchovies or smoked mackerel
sundried tomatoes or fire roasted peppers
chives or spring onions
sliced pickled jalapeños
a spoonful of chutney or piccalilli
