LAMINGTON is a rectangular sponge cake covered with chocolate glaze and rolled in coconut flakes.
LAMINGTON cakes are very famous and popular in Australia. And in the republics of the Balkan region, such as Croatia, Slovenia, Bosnia and Herzegovina, they are called "CHUPAVTSI", which can be translated as "hairy". These cakes can also be found under the name "coconut cubes".
Ingredients:
Biscuit dough:
• flour - 320 gr./ 2 1/2 cups
• sugar - 220 gr. / 1 cup
• vanilla sugar - 8 gr.,/ 1 tsp
• eggs - 6 pcs.,
• milk - 150 ml., / 2/3 cup
• vegetable oil - 150 ml.,/ 2/3 cup
• baking powder - 8 gr.,/ 1 tsp
• salt - 1/4 tsp.
Glaze:
• dark chocolate - 200 gr.,/ 7 oz.
• butter - 150 gr.,/ 5 oz.
• sugar - 50 gr., / 1/4 cup
• milk - 350 ml./ 1 1/2 cups
Coconut flakes
Bake for 30 minutes at 180 ° C / 453 K / 356 ℉
