Here is the full recipe video on how we made our Super Mario Mushroom boba! These are tapioca boba pearls shaped like Mario mushrooms. These are not popping boba! They are chewy.

RECIPE:
For the boba:
2 Tbsp water
1 Tbsp sugar
1 + 4-5 Tbsp tapioca starch
Food coloring (red, green, brown)
Edible white luster dust
Poppy seeds for eyes

For the drink: ( I didn't measure this so these are estimates, adjust to taste!)
3 Tbsp strawberry syrup
1 cup club soda
1/4 cup half and half or heavy whipping cream

In a saucepan on very low heat (DO NOT PREHEAT), combine sugar and water and stir until sugar is dissolved. Mix in 1 Tbsp of tapioca starch and increase to medium low heat. (If it gets lumpy, your mixture was too hot.) Watch the mixture closely, it should start to become sticky. Stir it, and if it is getting sticky, mix until the mixture is completely sticky. Take off heat and fold in rest of tapioca starch until dough forms. Pour onto cutting board and start kneading. Add tapioca starch until the dough is no longer sticky.
Once smooth, separate in to parts for each color. For the white spots, you must add white edible luster dust or white food coloring. For the tan dough, also add white edible luster dust, and some brown food coloring. Red and green just use food coloring. Knead in until color is evenly distributed. Roll out the dough and cut out star shapes using the star cutter. Sculpt the Mario mushrooms, use water to make the individual parts stick. Use poppy seeds for eyes. See video on how to sculpt.
Coat in tapioca starch to prevent sticking, and shake off excess before cooking.
Bring a pot to a boil, add in your boba. Stir until they float. Once floating, lower heat to low, cover and let cook for 10 minutes. Remove from heat (still covered) and let sit another 10 minutes. Check your boba, if they look like they have large cores in the middle, let them sit in the hot water longer. Drain and rinse boba in cold water to stop the cooking process. Add honey or other sweetener to boba pearls. (optional)

For the drink, add your boba. Then add strawberry syrup, club soda, and cream. Stir. Top with whipped cream. Done!
