The difference between Lox and Smoked Salmon
Technically speaking lox also come from Scandinavia but was popularized in America by Jewish immigrants. It is NOT smoked.
Nova refers both to the Canadian province of Nova Scotia, the location where this fish is caught, AND the style of how it’s smoked.
Hot smoked salmon is called kippered salmon (smoked at 150 F) and is closer to poached salmon. It is not served thinly sliced.
You can find all these varieties at Jewish appetizing stores, which is like a delicatessen, but without the meats.
