Software on a PC (most likely unreal engine) can take that cameras position and create a virtual camera in a 3D scene created by some artists. Because the 3D scene is lined up exactly with the real world then they can show it on the LCD displays. So as the camera moves it's like those are windows into a virtual world and creates a really cool effect.
What happened here is that somehow the stream switched to just the 3D scene. So you had the same camera movement but it was just what should be displayed on the screens behind them. So it looks as if they just vanished.
