Psychodelic Kitchen is an experimental cooking show created by Piero Passcantando, Arturo Passacantando and Carla Ciffoni. Whisking together elements of the classic cooking show format, retro futuristic internet aesthetics, performance art, psychedelia and more, Psychodelic Kitchen is a groovy yet instructive voyage in the depths of Piero’s delirious tasty cuisine.
PIERO'S MARINADE
Ingredients:
1 medium chicken (always buy free range and organic when possible), or 1 medium butternut squash (any pumpkin/squash will work)
MARINADE
1 yellow Onion
4 cloves garlic
1 tbsp ginger
10 sprigs of Thyme
1 tbsp Allspice
1 tsp Star Anise
2-3 strands Saffron
2-3 leaves of Sage
200 ml Wine
Pinch of Elicrisio
2 tbsp JAM or honey or sugar with some seasonal fruit
Chillies to taste
Salt to taste
100ml Soy
Pinch Nutmeg
1 tsp Cumin
1 tsp Fenugreek seed
1 tsp Coriander seeds
1 tbsp olive oil
Salad:
1 bunch of Salad
A few foraged nasturtium leaves
One Orange
Handful of Black Olives
1 tbsp Capers
1 tbsp Vinegar
1 tbsp Oil
Salt to taste
Pepper to taste
Process:
Roughly chop onion, garlic and ginger. Mix all other ingredients and blend. Taste the marinade. The mix I propose above is a guideline. Add what you like! 🙂
Chicken:
Butterfly the chicken. Rub the marinade on the chicken. Place in a ziplock bag or a container to marinate for a few hours or overnight (better).
Preheat oven at 160 C, place chicken breast-side facing down in an oiled baking dish with marinade. cover with aluminum foil or lid. Place in the oven.
Check after 1 hour, removing foil, flipping the chicken, basting in its own juices often. After about another half hour, check for doneness.Internal temperature should be at least 75 C, but I prefer to bake it a bit longer, until it’s falling off the bone (about 2 hours total)
Butternut squash:
Cut in half from top to bottom, remove seeds. Cut again each half from top to bottom and then each again. You should have 8 slices. Rub the marinade on the squash. Place in a ziplock bag or a container to marinate for a few hours or overnight (better).
Preheat the oven at 160 C, place squash slices skin-side down on an oiled baking dish with marinade. cover with aluminum foil or lid. Place in the oven. Check after 45 min, remove foil, baste in its own juices often. Check for softness.
Salad
Supreme the orange by cutting out external skin first, then along the white skins separating the wedges to obtain just the pulp. If some orange is left in the cutouts, squeeze in the salad whole dressing. Wash and rip salad leaves. Add olives, capers, oil, vinegar, salt and pepper to taste.
