Summer has finally arrived here, and that means strawberry season for me! Today I'm making small, light strawberry tartlets with a cookie crust. And the best part: the oven stays off completely! :-) What's your favorite summer fruit?

STRAWBERRY TARTS
Ingredients: (for 4 tarts)
Base:
120g cookies
80g butter
Cream filling:
150g quark
150g cream cheese
175g whipped cream
100g sugar
6g gelatin
Zest of one lemon
350g strawberries
Preparation:
Crush the cookies in a freezer bag using a rolling pin. Melt the butter and mix it with the cookie crumbs. Grease the molds well and distribute the cookie crumbs evenly among them, pressing them down lightly. Chill. Soak the gelatin in cold water. Combine the quark, sugar, and cream cheese. Whip the cream.
Squeeze out the gelatin and warm it in a saucepan, but do not boil! Once dissolved, stir in a quarter of the quark mixture, then add the gelatin mixture to the remaining quark mixture. Spoon the quark mixture onto the cookie bases. You can do this with a spoon or a piping bag. Chill the mixture until it starts to set slightly, then decorate with strawberries as desired. Chill again and dust with powdered sugar before serving, if desired.
