The E1 camera is not a requirement; an old Panasonic or Canon camcorder with clean 1080p output is a great cheap option as well. If you want something even better, the GH5S is my choice, though there are dozens of great ~$1000 options from most major brands that will also offer HDMI out and great video quality.
For audio, maybe the Zoom H1n + a $20 lapel mic will provide a flexible mic solution? There are plenty of cheap USB mics out there, too, or perhaps just keep using your built-in/webcam microphone. I'm personally using the Shure SM7B with a USB-based XLR audio preamp, but that is quite costly.
