The EASIEST, FASTEST Way To Make Pickles
Refrigerator pickles, also referred to as Overnight Refrigerator Pickles are SO EASY to make and you can use this recipe for pickling vegetables of any kind! If you love a crunchy dill pickle and are looking for an easy delicious recipe, this one's for you, my friend!
Easy Refrigerator Pickles Recipe
Pickling Brine Recipe
2 cups white vinegar
2 cups water
2 cups sugar
1/4 cup kosher salt
For each quart jar
1-2 cloves garlic
sprigs of dill
hot pepper (I like the round cherry bombs or jalapenos)
Soak pickling cucumbers in ice water for 4-5 hours. AFTER soaking, pierce through middle of cucumber with a METAL skewer (do not use a wood skewer!) . Make sure jars are super hot (after washing in dishwasher and while I'm prepping the cucumbers, I keep the jars full of boiling water).
Keep lids and rings in simmering/boiling water. Place 1-2 cloves of garlic in bottom of each jar, fill jar with sliced cucumbers halfway, then place some sprigs of dill and a chunk of hot pepper (sliced open to release the spicy!). Fill the remaining jar with more sliced pickles. Pack them in as tight as you can. Fill each jar with the BOILING brine. Wipe rim of jar with clean, damp cloth. Place lid and screw ring on. Done! Your jar WILL SEAL. You will hear the pop when it seals (15-20 mins APPROX). After pickles cool, place in refrigerator.
