🥚What do boiled yolks give to the dough?
The dough made with boiled yolks is more tender, crumbly, and fragile. In order for the dough to be crumbly, it is necessary to prevent the development of gluten, so shortcrust pastry is made with butter, and boiled yolks contain less liquid than raw ones, which is why they prevent the development of gluten. The finished products are more tender and simply melt in your mouth.
