Begin by preheating oven for roasting your garlic
@325 for 15 minutes in EEVO or Avocado Oil.

Recipe for #ChipolteVegetarianLentilSoupWithZoodles

Ingredients
1/4 cup Organic Avocado Oil or Organic extra virgin olive oil
15 large Roasted Organic Garlic Cloves, diced
32 oz container of Vegetable Broth if you aren't going Vegan, use Organic Bone Broth
2 Cups of Organic Red or Brown Lentils Rinsed
1 Cup of Organic Quinoa (I used red for this recipe)
1 32 OZ can diced Organic Roasted Tomatoes
1 Pint of sliced/quartered Grape Tomatoes
1/2 small Organic Diced Sweet Yellow Onion
4 baby diced Organic Red and Green Pepper
1/2 Bag of Frozen Organic Okra chopped
1-2 Chipolte peppers and
2 tablespoon of Adobo Sauce
4 stalks of Organic Celery Diced
4 Organic Carrots sliced
1 Organic Habanaro diced
1 Organic Jalapeno diced
1/4 cup of Pinot Noir
2 Bay Leaves
1/4 cup Fresh Organic Cilantro or Organic Baby Spinach
Juice of 2 Limes
1 1/2 tsp of the following Organic seasonings: Herbs De Provence or Italian Seasoning, Pink Himalayan Salt,
Black Pepper, Cumin, Chipolte Pepper, Cajun, Cayenne, Coriander, Hot Hungarian Paprika and Dan-O's Seasonings.
2 Zucchini's that are spiralized
Avocado, Cilantro leaves, Zest of Lime and Almond Yogurt for toppings
*** Optional use your favorite noodle to serve

#INSTRUCTIONS
Press saute function on the Instant Pot and Slow Cooker. Note: If you have an old fashioned Crock Pot you will saute in a skillet.
Cover the bottom of the pots with EEOV and saute the veggies, spices and garlic for 2-3 minutes.
Turn off Saute feature
Add remaining ingredients #EXCEPT Zoodles and Cilantro (or Spinach if not using Cilantro)
Select the Manual function of the IP and Slow Cook for Slow Cooker. Cook IP for 15 minutes on High and allow for 10 minutes natural release. For Slow Cooker you will cook slow for 4 hours high or 6 hours on low.
Open the lid and add in Sprialized Zucchini & Spinach.
While piping hot, serve and top with above toppings.
