No bake Cake
Shortbread cookies - 300g
Cream:
Eggs - 3pcs
Sugar - 200g
Vanilla sugar - 8g
Cornstarch - 30g
Sour cream 30% - 800g
Butter 82% - 70g
Using a blender, grind shortbread cookies into crumbs.
For cream, mix eggs, sugar, vanilla sugar and corn starch thoroughly. Add sour cream, mix until smooth and put on medium heat.
Constantly stirring with a whisk, you need to brew the cream (it will start to thicken pretty quickly). Remove from heat, add butter and stir.
Cover the mold (20x20cm) with parchment paper.
Lay out in layers: ¼ of the cookie, ⅓ of the hot cream, then again ⅓ of the cookie, etc. The final layer should be cookies.
Cover with plastic wrap and refrigerate overnight.
You can garnish it with berries before serving.
