Hello dear friends of baking and food, here I'll show you how to quickly and easily prepare the best and most delicious vegan carrot cake... And it's all based on a recipe from my grandma, who was also vegan!!!
VEGAN...? YES...!!!! You'll be surprised at how delicious it is!
If you don't want to make the cake vegan, simply use three eggs instead of the 3 tablespoons of mashed potatoes.
To enjoy yourself or as a gift for Easter and other occasions! ! !
The special thing about it - we bake the cake without eggs and without flour.

Here are the ingredients - it's so easy...
Ingredients:
2 potatoes - cut into small pieces, boil in unsalted water, then mash to form mashed potatoes - let cool.
300g ground hazelnuts
850g carrots - peeled and grated
200g sugar
50g coarse oatmeal
8g vanilla sugar (DIY - super easy and sooo delicious!!!!)
Lemon zest (untreated) - grated
Juice of 1/2 lemon
Pinch of cinnamon
1 apple - finely grated
5g packet of baking powder or baking soda
2 tablespoons of water

I make almost everything with it.
Combine all ingredients, then stir in three heaped tablespoons of mashed potatoes. Mix well and pour into a 28cm baking pan greased with margarine.
Preheat uncovered - fan oven 180°C for 45 minutes
Oven without fan oven 200°C - 220°C for 40 minutes
Finally, decorate with carrots made from homemade marzipan.
