the TAS2R38 gene accounts for variations in taste buds, particularly for BITTER receptors. those that have more bitter receptors (about 15 - 20% of the population) are especially sensitive to things like coffee, wine, beer, or tonic water. these folks are known as SUPERTASTERS. this video talks a bit about the history, definition, and daily lives of supertasters.
