💥Grilling Chicken Like A Boss😎💥

I was given the task of making staff food for the team and as the weather was 30 degrees, I decided that a Chicken Caesar salad would do the trick 😁. But I wanted to make a nice marinade for the chicken and add some flavour. Other chefs may have steamed the chicken or roasted it plain with salt and pepper but I wanted to go down a different route. I decided to make this marinade I remembered making in one of my previous jobs and it just came to my head. So I added everything into a blender and the blender did its magic. Here is what I added to the blender:

Pomace Oil, Lemon Zest, Garlic Cloves, picked parsley, picked coriander, picked chives, picked chervil, shallot, salt and pepper. I didn't follow a recipe myself for this one so I did it by feel and knowledge and then adjusted the seasoning to taste. Have a play around and add other ingredients if you wish if you feel like it will enhance your dish for the better ✊💪.

Once you paste is made, marinade your butterflied chicken (butterflied means it's cut open so the surface area is large and the breast is flatter and will help achieve a more consistent cook and result with your chicken) and ideally leave overnight. However, I left mine for four hours and the feedback from the team was great or they could have just lied to me...who knows 🤷🏻‍♂️🤦🏻‍♂️🤣.

After that, as you can see in the video, no oil was needed on the char grill and you don't need to worry about sticking as long as you maintain a good temperature on your char grill. After grilling both sides, check internal temperature and make sure it's cooked. I didn't go too heavy on the char as I wanted the flavours of the marinade to come though and not let the BBQ flavour overpower everything else. Bon Appetit 🤪😎.
