This is a very simple bean burger recipe. I will also be having a recipe for a spicy black bean burger and a lentil burger soon.
Ingredients-
-1 15 oz can pinto beans
-1 15 oz can kidney beans
6-8 oz mushrooms (depending on how much you like mushrooms I used 6-7 oz.)
-1/4 cup flax seed meal
-1 large onion
-4 cloves of garlic
1/3 1/4 cup fresh parsley-I used flat leaf (I used about 1/4 cup because my husband isn't a huge parsley fan, but if I were making them just for myself, I would have used 1/3 cup, so it's up to you)
-2 tsp cumin powder
-2 tsp coriander powder
1-2 tsp spice blend mix of choice I used a Trader Joe's 21 seasoning salute, but you could use any blend you like or have.
-Salt & Pepper to taste
Instructions-
-Dice the onion and garlic
-In a non-stick pan cook the onion with a little salt, on medium heat, stirring, for about 5 minutes.
-Add garlic, cook for another 5 minutes, stirring.
-Chop mushrooms into small pieces, add to pan, cook for 5-10 minutes, stirring.
-Once everything looks cooked down, add in the spices, stir, shut off heat.
-Drain the 2 cans of beans, rinse and add to a large bowl.
-Mash beans by hand or put them in a food processor.
-Once beans are mashed, add flax seeds, chopped parsley, and mushroom mix to bowl, mix well.
-Form into patties and cook in either a pan on medium heat, on both sides, or a grill, or bake in the oven (375 degrees for 15 minutes)
*This recipe makes about 8 patties
*You could use any beans you like or have on hand.
*If you don't have fresh onion and garlic, you could use 1 tbsp of powder.
*You could use any herbs you like or have on hand
*To make these spicy add some chili flakes or hot sauce.
-I served mine on a food for life Ezekiel English muffin with some vegan mayo, ketchup, pickles, onion, tomato, and a side of homemade sweet potato wedges.
