Grain mills are not just for wheat!! Cornmeal is so much fresher and tastier fresh ground. My trick is doing a medium grind so you get corn flour and corn meal so i dont have to add wheat flour and it can be naturally gluten free (although my mill has seen wheat so its not technically gluten free!!)
