Ginger Coconut Milk Broth
Perfect for clouds and in possible rain, this is a recipe for the Ginger Coconut Milk Broth that we served with the first course. We paired it with roasted vegetables, but it tastes delicious alone, with chicken or shrimp or a hearty helping of rice.
2 - 14 oz cans coconut milk
3 inch piece of ginger - peeled and minced
Salt to taste
Optional:
Sugar
Vietnamese Fish Sauce
Sauté the ginger in the thick coconut cream that forms on the top of the can of coconut milk for a few minutes - until the cream has pretty much evaporated and the ginger is toasted.
Add the rest of the coconut milk, stir, and add salt to taste.
Let simmer for at least 5 minutes but as with broths - the longer it sits, the better the flavor. And you bet it tastes even better the next day.
I like to add a little bit of sugar and a few dashes of fish sauce to add some depth. A squeeze of lemon would be great too. Trust your taste buds
