Today I want to introduce you to Armenian cuisine. This wonderful, refreshing soup is simply irreplaceable during the hot summer months. I highly recommend you try it and delight your loved ones with this dish. 🤗 It's delicious both hot and cold.
Ingredients:
• Matsun - 500 g
• Sour cream 20% - 300 g
• Chicken egg - 1 pc.
• Boiling water - 1 liter
• Dzavar - 250 g
• Green onions - 4 stalks
•Cilantro - 50 g.
•Salt - to taste.
Preparation:
1) First, soak the dzavar in cold water for 2-4 hours, or better yet, refrigerate it overnight. This will speed up the cooking time.
2) Cook the soaked dzavar for 20-25 minutes, adding salt to taste.
3) Five minutes before the dzavar is ready, combine the matsun, sour cream, and egg in a saucepan, stirring constantly.
Over medium heat, bring to a gentle simmer. Once the base comes to a boil, add the cooked dzavar and stir thoroughly.
4) Next, add boiling water in a thin stream, stirring constantly.
Stir until the soup returns to a boil.
5) Fry the green onions in butter for one minute and add them to the soup. Cook over low heat for 5 minutes and add the chopped cilantro. At this point, the soup is ready. Serve hot or cold. Enjoy!
