YOGURT CHEESECAKE WITHOUT BAKING
To prepare it, we will need:
350 g thick yogurt
150 g sand cookies
140 g cream (not less than 30% fat)
70 g of butter
20 g sugar powder
15 g gelatin (90 g soaking water)
for creamcheese:
300 g curd (cream) cheese
100 g butter
80 g sugar powder
The culinary ring is tightened with food film and from the inside it is framed with acetate tape. For this volume of products I use a 20 cm diameter mold.
We grind cookies in a blender. Add melted butter to the sand crumb. Carefully we mix. When pressing, the dough should hold the shape well. If the dough falls apart, you need to add some milk.
Pour the mixture into the mould and grate with a glass. We send to the refrigerator.
Meanwhile, gelatin is soaked in cold water and left to swell.
Yogurt is mixed with sugar powder. Separately we beat cold cream to soft peaks.
Swollen gelatin is dissolved in a microwave for 10 seconds or in a water bath. With a thin jet we pour gelatin into yogurt, constantly stirring. Then we carefully introduce whipped cream. We interfere carefully, but quickly, as gelatin will begin to grip immediately. Pour the mixture into a mould and spread with a blade. We send it to the fridge for freezing.
Meanwhile, we 'll make creamcheese for decoration.
Softened butter is whipped with sugar powder until lush for about 3-4 minutes. Add cold curd cheese. Stir until uniform, but do not beat. If desired, a food dye can be added and mixed thoroughly.
We transfer the cream into a confectionery bag with a nozzle and decorate the already frozen cheesecake. We send to the refrigerator for stabilization and get only before serving on the table.
