Tis the season for Pumpkin Pecan Waffles 🧇
These turned out even better than I had hoped. I thought of this idea while sleep deprived and working on-call, which I'm currently still in the middle of. I was half asleep and somewhat awake, but barely, and I found myself craving waffles. I was much too exhausted to stand, let alone cook. So, I quickly jotted the idea down in my phone before passing out for a quick 20-minute nap before the next non-emergency emergency call jolted me awake in a panic at 3am. The next day, I came across the candle in my candle stash, prompting me to remember the note I made in my phone. It stated: M3dak pjdkalmkin jecaikn fkslles (Did I mention I was tired?) Anyway, here's the recipe. Enjoy!
2c AP Flour
1tsp Salt
4tsp Baking Powder
2TBSP Castor Sugar
2-3tsp Pumpkin Spice
3tsp Cinnamon
1/8tsp cream of tartar
2 large eggs (seperated)
1TBSP white sugar
1c milk
1/2 can pumpkin puree
1/3c butter, melted
Chopped pecans
1tsp vanilla
Warm Pump puree in brown butter on stove, let cool. Mix dry ingredients together. Whisk egg whites, 1TBSP white sugar, aaa cream of tartar to stiff peaks. Add melted butter, egg yolks, vanilla, and milk to dry ingredients. Mix until smooth. Don't overmix. FOld in egg whites. Cook Waffles. Toast chopped pecans in brown butter and salt. Top waffles with butter, pecans, and syrup.
