Roasted cauliflower is so yummy. There are so many great recipes out there for cauliflower! It really is one of the most versatile vegetables out there, sort of a super-hero veggie packed with nutrients and able to bring healthy deliciousness to the table in all sorts of creative ways.
This recipe has you slathering cauliflower in a spicy yogurt marinade and roasting it at a high temperature. The result is an amazingly delicious dish that's as dramatic in presentation as it is easy in preparation.

Spicy Whole Roasted Cauliflower With Cheese
Ingredients
2/3 cup Greek yogurt or sour cream
2 tablespoons lemon juice
1 tablespoon vegetable oil
1 teaspoon curry powder
1 teaspoons salt
1/2 teaspoon black pepper
2 cloves garlic minced
1 head cauliflower (medium)
1/2 cup grated cheese

Directions

1. Preheat the oven to 400°F/200°C and lightly grease a small baking sheet with vegetable oil. Set aside.
2. Trim the base of the cauliflower to remove any green leaves and the woody stem.
3. In a medium bowl, combine the yogurt with the lemon juice, curry powder, salt, pepper and garlic minced.
4. Dunk the cauliflower into the bowl and use a brush or your hands to smear the marinade evenly over its surface. (Excess marinade can be stored in the refrigerator in an airtight container for up to three days and used with meat, fish or other veggies.)
5. Place the cauliflower on the prepared baking sheet and roast until the surface is dry and lightly browned, 40 to 45 minutes. The marinade will make a crust on the surface of the cauliflower. Check after 45 min with a knife to see if it’s cooked or still hard and add more cooking time according to how you’d like to eat the cauliflower.
6. Remove the cauliflower from the oven and sprinkle generously with cheese. Bake another 5-10 minutes.
7. Let the cauliflower cool for 10 minutes before cutting it into wedges and serving.
