Chicken Stew - Caldo de Pollo
This delicious Caldo de pollo is a richly-flavored chicken stew with vegetable and a combination of tomatoes and chile guajillo broth!
Ingredients:
6-7 Chicken thighs or drumsticks
6 Roma tomatoes
3 Chile guajillo
1/2 White Onion
3 Garlic Cloves
1 Tsp Paprika
1 Tsp Ground Coriander
2 Tbsp Chicken Bouillon
Salt & Pepper
2 Quarts of water of Chicken broth (8 Cups)
1 Chayote Squash or 2 Medium Potatoes
3 Large Carrots
3-4 Ears of Corn
1 Cup of Fresh Green Beans
You can also add or take away any other vegetables and make it unique to your taste.
