Today we made a Gypsy Cake, also known as a Fortune Cake. You can make it on Epiphany, January 6th of this coming year; or any day you need an energy of unity, hope, renewal, and prosperity.
Make this cake with joy, singing, listening to music, and even dancing, seeking the energy and joy of the gypsy people. As you eat the cake, think about things you want to achieve, change, and improve in your life.
Everyone, the cake is delicious, and I'm sure you'll love it!
I'll leave here a basic recipe for what you can add to the cake, but you can also use your intuition.
Recipe:
-50 grams of melted butter
-2 eggs
-1 cup of sugar
-1 and 1/2 cups of all-purpose flour
-2 capfuls of vanilla extract
-1 tablespoon of baking powder
-grated nutmeg
-1 teaspoon of ground cinnamon
Fruit:
-chopped candied peaches (use a few spoons
in the syrup batter)
-dark or light raisins
-candied fruit
-green apple
Mix all ingredients in this order, bake over medium heat for 20 to 25 minutes, and let it cool before removing from the pan.
You can decorate with a syrup made with 3 tablespoons of sugar, 1 tablespoon of honey, and 5 tablespoons of water. Cook over low heat, then add a few thin apple slices. Assemble the cake with the apples, syrup, and candied fruit, and sprinkle with a mixture of sugar and cinnamon.
