"Why do vegans want to eat meat substitutes" is a question I get all the time and tbh there's sooo many answers, I will list a few here:

Meat flavour is predominantly made from non-vegan ingredients (seasoning glazes, curing etc), so this is the flavour we are replicating.
I didn't go vegan because I didn't like the taste of meat, I went vegan because I learned where it came from.
Societal/Tradition: having vegan meat options is a fantastic way to mix seemlessly at parties and gatherings. Before it felt like a bit of a pariah, but now my food and especially my vegan versions get sooo many people asking about them. Because the vegan options are such higher quality than people's factory farmed burgers, ham etc it's quite unfair as they taste so much better.

This charcuterie board reminds me of Spanish tapas, as they can literally be eaten on their own as they are bursting with flavour. The choreezo is classic chorizo, the porquetta has a great fennel taste and the breseola...oh wow! It is the best pastrami style vegan food over ever had. Even better than the squeaky bean.
