In this vid I show you how I was taught to brine and smoke pork hocks back in the 1970's by my grandfather. We did not use a Weber, we would use our in ground smoker, but you get the idea. It is a super easy thing to make, but very time consuming - 4 days from start to finish. You can eat the meat right after smoking, but I prefer to use it in other recipes.
Ingredients for the brine:
4 Litres of water
1 cup Brown sugar
4 TSP pink salt #1, Prague powder #1, Cure #1
¾ Cup pickling salt
1 TSP pepper corns
4 Bay leaves
12 Juniper berries
2 large pork hocks cut in half
