INGREDIENTS FOR MEATLOAF:
1Tbsp of butter/oil
3/4 cups of chopped onion
8oz of chopped mushrooms
1-2 chopped garlic cloves or 1 tsp of garlic powder
1 lb of ground beef or turkey
1 cup of panko breadcrumbs
1/2 cup of milk or chicken broth
3 Tbsp of fresh chopped parsley
1 Tbsp of Sriracha or other spicy sauce (optional)
1 tsp salt
1/2 tsp of pepper
1 large egg
cooking spray
INGREDIENTS FOR KETCHUP TOPPING:
1/2 cup of ketchup
1 Tbsp of brown sugar
1/8 tsp of ground mustard
1/8 tsp of ground nutmeg
INSTRUCTIONS:
1. Preheat oven to 350ºF
2. Melt butter or oil in frying pans and add onions, mushrooms and garlic cloves. Cook for approx. 8 minutes stirring occasionally. Remove from heat. Cool for at least 5 minutes.
3.Combine the mushroom mixture, ground beef, breadcrumbs, milk, parsley, hot sauce, egg, salt and pepper in a large bowl; stir well to combine. Shape it into a 9x5 in rectangle baking dish coated with coating spray.
4.Combine ketchup, brown sugar, mustard, and nutmeg in a small bowl, stirring with a whisk. Spread ketchup mixture evenly over top of meat loaf; bake at 350° for 40-60 minutes or until a thermometer registers 160°. Let stand for 10 minutes before serving.
