These tilapia, rice and veggie parcels are an easy weeknight meal but pack a ton of flavor in a small package.

Ingredients:
1 cup of pre-cooked rice, OR 2 small yellow or red potatoes, sliced as thinly as possible
1 sheet of parchment, cut in half
2 sheets of aluminum foil, 12x24 inches
2 5oz firm fish fillets (Kayte used Tilapia)
2 small tomatoes, cored and sliced into quarter inch thick slices
8-10 thin slices of red onion
2 Tablespoons olive oil
Juice of 1 lemon
4 sprigs of fresh dill
2 garlic scapes (if available)
Salt and ground pepper
Directions:
1. Preheat oven to 450F
2. Fold each foil sheet over to make a double-thick square.
3. Line foil with parchment (fold to fit). Rinse the fish and prepare the ingredients. Layer the cooked rice or potato slices, tomatoes and onions on each square. Top each with half of the fish.
4. In a measuring cup combine the olive oil and lemon juice. Pour it over the fish. Top the fish with dill, garlic scape, salt and pepper.
5. Fold the parchment over the fish then fold the foil into an airtight packet.
6. Bake for 20 min.
7. Place foil packets on a plate and carefully open them. Make sure the fish is cooked (return to oven if needed). Transfer to plates and pour liquid over each serving.
