Ingredients:
For the rice:
2 cups basmati rice
4 cups water
1 bay leaf
4-5 cloves
4-5 green cardamom pods
1-inch cinnamon stick
Salt to taste
For the vegetable curry:
2 cups mixed vegetables (carrots, peas, potatoes, beans, etc.)
1 onion, thinly sliced
2 tomatoes, chopped
1/2 cup yogurt
1 tablespoon ginger-garlic paste
1 teaspoon red chili powder
1 teaspoon turmeric powder
1 teaspoon garam masala
Salt to taste
Fresh coriander leaves for garnishing
For layering and garnish:
Fried onions (optional)
Saffron strands soaked in warm milk
Ghee or oil for cooking
Instructions:
1. Cook the rice: Wash the basmati rice under running water until the water runs clear. In a large pot, bring water to a boil and add the bay leaf, cloves, cardamom pods, cinnamon stick, and salt. Add the washed rice and cook until it is 70% cooked. Drain the rice and set aside.
2. Prepare the vegetable curry: In a pan, heat ghee or oil and sauté the sliced onions until they turn golden brown. Add ginger-garlic paste and cook until the raw smell disappears. Add chopped tomatoes and cook until they are soft. Add mixed vegetables, red chili powder, turmeric powder, garam masala, salt, and yogurt. Cook the vegetable curry until the vegetables are tender.
3. Layering the biryani: In a heavy-bottomed pot, layer half of the partially cooked rice at the bottom. Spread a layer of the vegetable curry on top of the rice. Repeat with another layer of rice and vegetable curry. Top it with fried onions (if using) and saffron-infused milk.
4. Dum cooking: Cover the pot with a tight-fitting lid or seal with aluminum foil. Place the pot on a tawa (griddle) or a low flame and cook on low heat for about 30-40 minutes to allow the flavors to meld together.
5. Serve hot: Once cooked, gently mix the layers of rice and vegetable curry. Garnish with fresh coriander leaves and serve hot with raita or cucumber mint yogurt sauce.
