Pre-cooked Potatoes
I always have pre-cooked potatoes in the house. Potatoes are an alkaline food and go well with everything. The "potato" is a great base for soups, sauces, or dips. Potatoes contain niacin, vitamin B3. It plays a key role in energy metabolism and supports nerves, muscles, and skin. They also contain vitamins B1, B2, and B6, and they also contain significant amounts of magnesium, potassium, and iron.
Waxy and mostly waxy varieties are suitable for pre-cooking. The potatoes are not peeled, but rather cleaned with a vegetable brush and then boiled in salted water. Then drain the water and let the potatoes drain in a colander. Once cooled, place them in a bowl and store in the refrigerator. The potatoes will keep for 5 to 6 days.
What's special is the retrograded starch. There's a great video about it where I explain exactly how you can easily lose weight with pre-cooked potatoes!
The basic ingredients for all soups, sauces, or dips are always:
Pre-cooked potatoes & vegetable broth, salt & pepper
Spices and vegetables are completely flexible depending on the desired result!
1st variation:
Tomato or bell pepper
possibly dried tomatoes
Rock salt
Red onion
Smoked paprika
Vegetable broth
Red vegetable juice / or tomato juice
For creaminess, you can add a little olive oil.
2nd variation:
Herbs as desired & preferred, e.g. Celery, parsley, basil, cilantro, etc.
Pre-cooked potatoes
Vegetable broth
Small piece of ginger
Rock salt
Hot water
Fresh pepper
Variation 3:
Chicory
Pre-cooked potatoes
Onion
Turmeric, fresh or powdered
Garlic
Ginger
Fresh lemon juice
Preparation:
Heat vegetable stock or water. Wash the herbs and vegetables and add them, stems included, to the blender with the potatoes, garlic, olive oil, and lime juice.
Season with salt and pepper and puree. The sauce will keep refrigerated for 2 to 3 days.
