• 1 roasting hen (or a chicken)
• 4 carrots
• 1 leek
• 1/2 stalk of celery
• 1 yellow onion
• 1 clove of garlic
• 200g mushrooms
• 1 slice of cooked ham, about 1cm thick
• 50g butter
• 50g flour
• Juice of 1 lemon
• 1 egg yolk
• 500ml chicken stock (reserved from cooking your chicken)
• 4 puff pastry shells
• 100ml double cream
• Salt, nutmeg, and freshly ground pepper
