In this Carrot Cake Recipe I will give you 3 fantastic tips to take your cake baking to another level.

Imagine, you're at home and your family and friends have come over for a chat. You bring out the coffee or tea and then this wonderfully delicious carrot cake with a creamy cheese frosting. Once they take their first bite, the looks on their faces say everything!

Everyone will want you to share this carrot cake recipe with them. That is one of the great aspects of being able to cook and bake well is the great satisfaction in sharing your food with your friends and family and the enjoyment everyone receives!

Ingredients:

1 cup of flour
1 tsp of baking powder
1 large carrot grated (about 1 cup)
150g butter (soft at room temp)
3 eggs
3/4 cup of brown sugar
1 teaspoon of cinnamon
1/2 teaspoon of nutmeg
1 teaspoon of bicarbonate soda
1 teaspoon of orange zest
1/2 teaspoon of salt
3/4 cup of chopped walnuts

Cream Cheese Frosting:

4oz/125g of cream cheese
1 1/2 cups of icing sugar
3 tablespoons of butter
1 teaspoon of vanilla extract

Bake for 30-35 mins or until skewer comes out clean at 350°F / 180°C


Directions:

1) Preheat your oven to 350°F / 180°C degrees.

2) Spray a 9-inch / 22cm square or round baking pan with butter.

3) In a bowl toss together the carrots, walnuts and the 1 Tbsp of flour until all of the carrots and walnuts are coated with the flour. This is the 1st tip of making a great carrot cake as coating them with flour will stop the carrot and walnut from sinking to the bottom of the cake.

4) In a large bowl whip the butter and sugar until light and flour, cinnamon, nutmeg, baking powder and bi-carb of soda fluffy (2nd tip for making light and fluffy cakes) then add eggs and orange zest & beat until combined.

5) Sift the flour and add with carrot and walnuts to batter and fold in gently just enough to combine with the batter (3rd tip to making light and fluffy cakes).

6) Pour the batter into the prepared baking pan and bake for 30 - 35 minutes (Insert a skewer in the center and see, if it comes out clean.)

7) When the cake is ready, let it cool in the pan for a few minutes, then take it out and let it cool completely on a wire rack.

8) Once the cake is completely cooled, make the frosting my simply mixing all of the ingredients together until you get a nice thick frosting. If you need to, add a little more water by the teaspoonful to get a spreadable frosting consistency.

9) Adorn the cake with that incredible cream cheese frosting and sprinkle with a few walnuts. Let it set for a few minutes until the frosting begins to harden. Dig in whenever you like.
