2023 German Christmas Sausages

Once again, like every year, Kay is making some real 2023 German snack Sausages from Scratch. This time about 15 pounds because of an custom order and special wish from friends of us from California. Unfortunately I cannot share my wife's spice recipe since she call it family heritage and must remain within the family only - German tradition - I call it IP (Intellectual Property) - w/o labor, just spices and the meat's used - 1 Sausage link sells for about US$ 3.50- US$4.25 - (no labor or any other side cost's with calculated) (PS: the "ham nut" is NOT for sale at all, it is still resting in special brine for about 1 more month before cold smoking)
