I personally prefer it without the fries - but potatoes are an amazing carb for weight loss so of course please keep them in if that’s what you prefer 🙌
PER SERVING:
4 servings // 490 calories, 33gm protein ea.

1 lb lean ground beef
6 cups romaine
2 cups cherry tomatoes
1/2 red onion
4 oz pickles
1/4 cup shredded cheddar
4 med. Russet potatoes
4 Tbsp avocado oil
red wine vinegar, mustard, hot sauce, s&p, taco seasoning
1. FRIES: Preheat oven to 400 degrees F. Slice potato into fries shape, mix with 1/2 your avocado oil, salt & pepper. Bake for 20-40 minutes (more time if you’re making multiple servings)
2. MEAT: Add the other 1/2 of your oil to a pan, cook ground beef on medium heat until cooked through. Add in taco seasoning.
3. VEGGIES: Chop up tomatoes, red onion & pickles.
4. ASSEMBLE: Mix all ingredients together, top with hot sauce, mustard, red wine vinegar, and more salt & pepper.
5. No dairy? Use more oil when cooking. No meat? Use tofu or kidney beans.
