Raspberry and white chocolate Bavarian cream

Today I'm sharing a recipe for raspberry and white chocolate Bavarian cream. Fresh and fruity, it's the perfect dessert ;)
Ingredients:
Biscuit Base
50g speculoos cookies
150g shortbread cookies
80g melted butter
White Chocolate Mousse
3 egg yolks
20cl whole milk
40g sugar
2 sheets of gelatin
170g white chocolate
20cl heavy cream (30% fat)
Raspberry Mousse
400g raspberries
100g sugar
40cl heavy cream (30% fat)
4 sheets of gelatin
Raspberry Glaze
130g raspberries
65g sugar
3.5g gelatin
