Rabbit Year Resolution
Rum, Campari, Pineapple, Lime, Butterfly pea, Greek Yogurt
This milk punch from is a jungle bird in disguise. While milk clarifying does not add much to the flavor of the overall flavor, clarifiying with yogurt impacts a lactic tang that rounds out this cocktail. After clarifying, it is passed through butterfly pea flowers, known for adding a purple hue to anything in the presence of acid. This cocktail is a multi stage process, and its cool to see the thought and detail behind this drink.
3 oz dark rum
1.5 oz Campari
3 oz pineapple juice
1 oz lime juice
1 oz simple syrup
3 tbsp greek yogurt
Butterfly pea flowers
In a vessel, add everything together except for butterfly pea and greek yogurt. Stir. In a separate vessel add greek yogurt, then pour the mixture into the yogurt vessel. Stir to incorporate, and let it sit for a few hours. Pass the cocktail through a coffee filter.
Using a separate filter and vessel, add butterfly pea flowers on top of the filter and pour hot water to let the flowers bloom. Discard hot water. Run vessel under cold water. Pour clarified mixture over the butterfly pea flowers. The cocktail should start running grey, then slightly purple. pour mix back into the butterfly pea flowers until you achieve desired color.
To serve, stir down 3.5 oz of cocktail into a mixing glass with ice, then pour into a coupe. Garnish with dehydrated blood orange.
