Yuzu Foam
Sometimes you want to add a nice foam for a cocktail, dessert, etc. Well, here's a citrussy but not sour foam! This yuzu foam uses more of the peels of the yuzu/ yuja by way of a citron honey tea mix.
75 g citron honey tea mix ( you can find this at most Korean/ asian supermarkets
300 g warm water
15 ml yuzu juice, or lemon juice
1.8 g methocellulose 50
.5 g xanthan gum
pinch of salt
2 n2o charges
Add citron honey tea mix with water, and let it steep for 5 minutes, then yuzu juice and strain. sift methocellulose 50 and xanthin gum into the mix, then blend to incorporate. Add to a cream whipper and charge with 2 n2o charges, shaking in between, then let it sit in the fridge for at least 2 hours.
