The air fryer isn't actually a deep fryer!
And therefore, it DOESN'T FRY anything at all!
Inside the air fryer, there's a heating element and a fan.
The heating element heats up, and the fan distributes this heat quickly and evenly.
Does this system remind you of anything?
In reality, it's exactly what happens in a traditional oven. In a traditional oven, we can choose either a static cooking mode, with only the heating elements active, or a fan-assisted mode, with the fan turned on. This mode, like an air fryer, ensures faster and more even cooking.
So, in short, the operation of an air fryer is similar to that of a convection oven!
There are, however, some differences!
First and foremost, in size and therefore in capacity. A standard oven averages 65 liters, compared to 5-6 liters for an air fryer.
The difference in size results in a significant reduction in cooking times. The power of air fryers is roughly similar to that of conventional ovens, about 1,500 watts.
Less volume means shorter heating times for the same power.
The reduction in cooking times is also linked to another aspect: the fan found in air fryers is much larger than the fan found in a traditional oven.
The position is also different: in a traditional oven, the fan is usually located at the back of the oven, while in an air fryer, it is located at the top, above the heating element. This change in the size and position of the fan is called RAPID AIR TECHNOLOGY.
Faster cooking times allow foods to dry out less, resulting in crispier outsides and more tender and juicy insides.
Adding a splash of oil before cooking further enhances the crispiness.
And this is precisely the effect its inventor, Dutchman Fred Van Der Weij, wanted. In the early 2000s, he designed this appliance specifically to combat the unhealthy side effects of traditional frying.
So, in fact, the final result of cooking in the air fryer resembles that of traditional frying: crispy on the outside and tender on the inside.
But as you may have realized, frying, by definition, is something completely different!
Frying is a cooking method based on immersing food in boiling fat, usually oil. And obviously, we've learned that this doesn't happen in the air fryer.
