Both Matcha and regular green tea come from the same plant, which is called Camellia sinensis
When it comes to growing the plant, one main difference exists when trying to grow matcha over green tea. For matcha the tea bushes are covered for about 20–30 days before harvest. This helps to prevent direct sunlight on the plants and leaves
The shade helps stimulates an increase in chlorophyll levels in the plants , which not only turns the leaves into a darker shade of green but also increases the production of amino acids.
Post harvest, the leaves are separated from the stems and veins. They are then stone-ground into a fine, bright green powder, known as matcha.
The mains difference between drinking green tea and matcha powder is that the whole leaf is ingested with matcha powder, versus just the water that gets infused by the green tea leaves when consuming green tea ( the leaves get strained out with green tea). Because the whole leaf powder is ingested, things like caffeine and antioxidants are present in higher levels with matcha versus green tea
Matcha powder is also much more versatile and can be used in lattes, smoothies and shakes, as well as for culinary purposes like muffins, bars, ice cream etc.
