Ingredients:
1 liter Soy milk (almond and cashew milk work great too)
Juice of 1 lemon
1 tablespoon cornflour or semolina
1/2 teaspoon cardamom powder
Refined Oil for frying
3-4 tablespoons sugar or jaggery
A pinch of saffron (soaked in milk)
Instructions:
Prepare the Chena (Paneer):
Heat the soy milk on low heat.
Once warm, add lemon juice and stir gently for 2-3 minutes.
The milk will curdle, separating into chena.
Strain the chena using a clean cloth, squeezing out the excess water.
Make the Dough:
Take the strained chena and mix in cornflour and cardamom powder.
Blend the mixture in a mixer or knead with your palms until smooth.
Shape the smooth dough into disk shape.
Fry the patties:
Heat oil in a pan and deep fry the patties until they turn light golden brown.
Remove from the oil and set them aside.
Prepare the Milk Syrup:
In another pan, heat soy milk and add cardamom powder, sugar or jaggery, and saffron.
Let it simmer for a few minutes until the milk thickens slightly.
Assemble the Rasabali:
Add the fried chena patties to the simmering milk and cook until soft.
Once the patties have absorbed milk and are soft, your Rasabali is ready! Garnish with dry fruit.
Serve warm or chilled as desired.
