Egg Samosa Recipe
Ingredients:
2 Boiled Eggs
2 Medium Sized Onions Sliced
2 Sprigs Curry leaves
2 Sprigs Coriander Leaves
1/4 Tsp Cumin Seeds
1/4 Tsp Turmeric Powder
1/4 Tsp Chilli Powder
1/2 Tsp Coriander Powder
1/4 Tsp Meat Masala
Ready to use Samosa Sheets
2 Tsp Each Finely Chopped Coriander and Mint leaves
1/4 Tsp Ginger and Garlic Paste
3 Tbsp Maida
Oil For Frying
Salt as per taste
Prep:
Peel rinse and slice the Onion
Boil and peel the eggs.
Prepare ginger and garlic paste. I normally prepare with equal ratio of ginger and garlic.
Wash the curry leaves and finely chop.
Wash the mint and coriander finely chop.
Method:
In a frypan add 1 tbsp oil place the flame on medium. Once the oil is hot add sliced onion and curryleaves stir and fry till transparent.
Lower the flame add ginger and garlic paste followed by chilly powder, turmeric powder, coriander powder and meat masala stir and fry till raw flavor reduces. Add salt as per taste stir and fry for few seconds and remove from flame.
Remove the onion fill from flame allow it to reach room temperature. Add finely chopped mint and coriander stir once and reserve.
Slice the boiled eggs into half and reserve.
In a mixing bowl add 3 tbsp maida and 2tbsp water mix well to form a paste and reserve.
Place oil in a wok on medium flame for frying.
Start to fold the samosa sheet into triangle fill it with onion masala then egg and top with onion masala. Fold it as shown in the video seal the edges with maida paste.
Gently drop the samosa I hot oil fry on both sides till golden. Strain the samosa from oil and serve hot...enjoy!
